Grilled Eggplant a la “Irene”

With the entire city being under the Hurricane mass hysteria I thought I would dedicate today’s post to our anticipated visitor “Irene”. So since I expect to be indoors the better part of this weekend I figured I would give you all something to look at and perhaps try.

Grilled Eggplant with Garlic Sauce and Mint

Ingredients
  • 2 large eggplants
  • 2 tbsp olive oil
  • 6 cloves garlic
  • 2 tbsp rice vinegar
  • 2 tbsp
  • 1 tbsp sesame seed oil
  • 1 tsp red chili flakes
  • chopped
  • 4 steaks
  • salt and pepper to taste
Instructions
  1. Heat the grill on high.
  2. Cut the in round slices about 1 inch in thickness.
  3. Brush each side with olive oil and sprinkle with salt and pepper.
  4. Salt and pepper your steaks or season them how you prefer.
  5. Grill the eggplants until slightly charred and cooked through. Grill the steaks for about 7 min per side.
  6. While eggplants and steaks are grilling, make the garlic sauce. Using a mortar and pestle smash the garlic into a past.
  7. Add the paste to a small bowl, and add the rice vinegar, , sesame seed oil and chili flakes and stir well.
  8. Drizzle the garlic sauce over the eggplant, garnish with the chopped and serve along with the steak.
Recommendations:
This recipe includes a steak which we really don’t have in our home so I simply eliminated it. However, that has nothing really to do with the eggplant and the sauce. This is the first time I have ever made eggplant but it seemed simple enough when I read the recipe so I jumped in with both feet. Turns out these are really easy to make, the garlic sauce is insanely good and deserves a good swooning! BTW in case you didn’t see it I forgot to use the mint, no matter it was great despite this oversight.
